Butterfly pea flower tea — how to brew and why it changes colour
Butterfly pea flower tea is a caffeine-free herbal infusion made from the dried flowers of Clitoria ternatea. Its most striking feature is its deep, natural blue colour — and the way that colour changes in the cup.
How to brew it
- Put about 4–6 dried flowers (or one teaspoon) into a cup or teapot.
- Pour over hot water (around 90 °C).
- Steep for 3–5 minutes, until the water turns a vivid blue.
- Strain and serve.
Why it changes colour
The blue colour comes from natural pigments called anthocyanins, which are sensitive to acidity. Add a squeeze of lemon or lime and the tea shifts, before your eyes, from blue to a beautiful purple or pink. It is a simple, natural reaction and a favourite party trick.
Ways to serve
Enjoy it hot as a gentle, floral herbal tea, or pour it over ice for a refreshing blue iced tea. It also makes a natural colouring for lemonades, cocktails and desserts.
